Fergus Henderson opened St. John in 1994 on the site of a former smokehouse close to London's Smithfield Market. The restaurant showcases the philosophy described in his influential book 'Nose to Tail eating' - a return to the forgotten principles of traditional British cooking where all parts of the animal are used and nothing is wasted.
